Summary: So easy to use; excellent results - perfect
Comment: Bought this to replace a kitchen craft model that was utter tosh, and haven't looked back. The machine feels lightweight, but don't let this fool you: when secured to the worktop it is sturdy and can be operated one-handed without creeping or sliding. The rollers and turning mechanism are excellent and the machine produced fantastic pasta with only three run-through-and-fold-overs on the highest setting before dropping down through each of the settings to produce sheets of delicate pasta. The extra cutting deck seems like pure magic - we had such fun producing our own stranded pasta with little effort. I'm so very impressed with this little machine and what it can do - it made the whole experience easy and fun. When I bought a bread maker I stopped buying bread, now having bought this pasta maker I will no longer buy pasta.

Two tips... 1) Freeze your dough once it's been kneaded sufficiently - much easier to run through the machine once it has defrosted. 2) Do have a play with the stranded pasta - you don't need to go to the bother of drying it, simply toss some flour through it to stop it sticking, bag it up and freeze it till you want to use it. You can cook it straight from the freezer, and it still tastes fantastic.

Summary: Robust and efficient
Comment: I've had one of these machines for 30 years and it's still going strong and I do make pasta quite often. There is no doubt that home-made lasagna in particular is better than anything you can buy as you can roll the dough so thin that it becomes very fragile if it is left to dry for more than a an hour or so. I usually make it and cook within an hour. I find it's best to make a pretty pliable dough (1 egg to 70 to 80 g of pasta flour--no salt) that I kneed for about 8 to 10 mins, rest for 15 mins or so (covered with a cloth) and then roll and fold into three about 20 times adding a little flour to the outer surface to stop sticking at each rolling. It's ready to start making the dough into a thin ribbon when the folded edge goes "pop". Thereafter pass the dough through narrower and narrower settings until you reach the thinnest setting. I was told by Mary Contini of Valvona and Croalla fame not to add salt to the dough as it tends to toughen the pasta, only salt the water that you boil the pasta in. If you want to have a dough that is marginally easier to work, and that can carry a bit more flour, add a teaspoon of extra virgin olive oil to the egg before you work it into the flour. All this is a lot more trouble than buying a pack of pasta, but believe me, it's worth it.

Comment: I bought this item with birthday money. I chose it due to the good reviews it had received on here. It is a great device - very well made and sturdy as reviews mentioned, which as a first time pasta maker I soon discovered was very important!
You do need a bit of an overhanging worktop to clamp the device securely to for the thorough hand cranking required.
The little instruction booklet lost a little in the translation and was not entirely clear but I think the art of pasta making is probably a bit trial and error anyway.
Set aside a bit of time, clear the kitchen and get cranking - great fun & great device to do it with!

Comment: After reading reviews, decided to choose this machine as many said that cheap often breaks. This machine is sturdy and up to the job of rolling pasta dough. I had no probs with the clamp, although I moved the machine to the other side of the table to make it easier to use lefthanded. I am a complete novice and found all the reviews useful. I personally found that:
To stop pasta sticking, always lightly dust dough before putting it through the rollers. This stops it sticking and breaking. I rolled out all the sheets and let them dry about 15mins before cutting them with the tagliatelle cutters. I also cut each sheet in half to make them easier to feed through. To clean, I brush it with a fat brush (like a pastry brush or child's paintbrush)to get the flour off and then just wipe with a damp cloth. Don't over cook the pasta or it goes slimy! Hope this is useful
